Yakimono (Baked) Course
  Sake Sarada Tsutsumi-yaki (Stuffed Baked Salmon)

Fresh salmon fillet, stuffed with Japanese potato salad, shiitake mushroom & lemon;
oven-baked in a foil wrap

Gohanmono (Rice) Course
  Oyako Donburi (Chicken & Egg on Rice)

Literal translation is "Parent & Child"; a Japanese fast-food classic; the combination of
chicken, egg and rice in a sauce of dashi, mirin, shoyu and onion is hearty & flavorful

Aemono (Dressed) Course
  Horenso no Ohitashi (Soused Spinach)

Parboiled spinach leaves are soaked in stock of shoyu & mirin; they are then drained and
topped with toasted sesame seeds and shichimi togarashi
