Braciola di Maiale - Porterhouse Chop of Berkshire Pork from Baker Farm (Kiron, IA);
grilled then topped with a pickled cherry pepper, onion & white wine sauce,
Elk Tenderloin - From Blue Mountain Elk Farm (South Ryegate, VT); encrusted with
cracked peppercorns & stone-grilled; served with a balsamic plum glaze,
Stuffed Quail - Whole Quail from Cavendish Game Birds (Springfield, VT); stuffed
with chevre, wrapped in bacon, then oven-roasted to deliciousness
